With the holidays behind us, many of us are looking for ways to live a healthier life.  One of the best ways to do this is by eating better food.  Kale is a super food that provides many vitamins, minerals and anti carcinogenic properties…

Whether you sauté it, put it in soups or eat raw like in this Kale Cranberry Salad, you will surely be making a healthy choice in 2013.  Happy New Years!





2 bunches of Kale, washed and chopped
½ cup dried cranberries
¼ cup pine nuts, toasted
¼ cup parmesan cheese
1 TBS lemon juice
3 TBS olive oil
Salt & pepper to taste

Whisk the lemon juice, olive oil, salt and pepper and set aside. Next combine the top4 ingredients and toss with the lemon olive oil dressing. Keep this salad in therefrigerator for a quick meal, because the flavor improves with time.
