Granola is such an easy, affordable, energy packed staple that everyone should try to make at home. I bet you have most of the ingredients already in your pantry and if not, what a great recipe to improvise. Enjoy this mix over yogurt and honey or with your favorite milk.
4 1⁄2 cups rolled oats
3⁄4 cup slivered almonds
3⁄4 cup pecans, chopped
1⁄4 cup flax seed
1⁄2 cup cashew pieces
1⁄4 cup honey
1⁄4 cup vegetable or nut oil
1 tsp vanilla
1⁄2 tsp salt
3⁄4 cup real maple syrup
1⁄2 cup dried cranberries, chopped
1⁄2 cup dried tart cherries, chopped
Preheat oven to 350 degrees. Combine oats, flax seeds and chopped nuts in a large mixing bowl. In a separate bowl, mix together honey, syrup, oil, vanilla and pour over dry ingredients. Gently toss the wet and dry ingredients until the dry ingredients are coated thoroughly. Place the mixture in a shallow baking pan and bake for 45-60 minutes, stirring every 10 minutes, until browned. Remove the pan from the oven and toss with dried fruit. Allow it to cool and refrigerate or freeze in an airtight container.
