beet sandwich

I personally LOVE beets, but I know some people find their earthy flavor to be a bit too strong.  So, try using them as the “meat” in a sandwich…


In this recipe, I paired beets, spinach, sprouts, hummus and a lemon dill goat cheese spread on nutty whole grain wheat bread.  This variation on Pan-Handlers’ “Professor” sandwich is light, refreshing and full of flavor.

 

 

 

BEET SANDWICH WITH LEMON DILL GOAT CHEESE SPREAD

For the sandwich:

1 large beet, peeled, roasted & thinly sliced
Toasted Whole grain bread
Sprouts
Spinach
Pan-Handlers’ Hummus
Lemon Dill Goat Cheese Spread

For the Lemon Dill Goat Cheese Spread:

3 oz goat cheese
1 tsp lemon juice
1/8 tsp lemon zest
1 TBSP olive oil
½ tsp champagne vinegar
1 tsp fresh dill, chopped
salt & pepper

For the Lemon Dill Goat Cheese Spread: Combine all ingredients and serve on sandwich.
